Ingredients
  Lean ground beef 1 Pound
  Salt 3⁄4 Teaspoon
  Pepper 1⁄2 Teaspoon
  Root ginger 1⁄2 Teaspoon, grated
  Vegetable oil 2 Tablespoon
  Green pepper 1 , cut into cubes
  Onion 1 , chopped
  Carrot 1 , grated
  Vinegar 2 Tablespoon
  Brown sugar 2 Tablespoon
  Soy sauce 1 Teaspoon
  Dry sherry 1 Teaspoon
  Cornstarch 1 Tablespoon (Stirred Into 0.5 Cup Cold Chicken Or Beef Broth)
Directions

Blend together the ground beef, salt, pepper, and ginger.
Shape into 1 inch meat balls.
Heat oil in the wok and brown the meatballs on all sides for about 2 minutes.
Add all remaining ingredients.
Cook over moderate heat, stirring constantly, until mixture thickens.
Cook an additional 5 minutes.
Serve at once with rice.
