Beef With Asparagus And Hoisin Sauce
|Soy sauce||1 Tablespoon|
|Dry sherry||1 Tablespoon|
|Grated garlic||1 Teaspoon|
|Flank steak||1 Pound, thinly sliced with the knife held at 45Â° angle to the board|
|Vegetable oil||2 Tablespoon|
|Scallions||2 , cut into 0.25 inch diagonal slices|
|Asparagus||1 Pound, cut diagonally into winch slices|
|Hoisin sauce||3 Tablespoon|
|Roasted peanuts||1⁄2 Cup (8 tbs)|
Combine the soy sauce, dry sherry, corn starch, and grated garlic.
Add the beef and marinate it for 20 to 30 minutes.
Heat the oil in the wok and stir-fry, the scallions for 1 to 2 minutes.
Stirfry the asparagus for 2 to 3 minutes.
Stir fry the beef 3 to 4 minutes, until done.
Return the vegetables to the beef.
Stir in the hoisin sauce and peanuts and serve at once.
