Bring water to a boil, add shrimp, and cook 3 to 5 minutes.
Rinse with cold water.
Peel and devein shrimp.
Position knife blade in food processor bowl, add shrimp, water chestnuts, onion tops, salt, and sugar.
Top with cover, and process 30 seconds or until finely ground.
Beat egg white (at room temperature) until stiff peaks form, fold into the shrimp mixture.
Trim crust from bread, cut each slice into 4 triangles.
Broil 6 inches from heat 1 to 2 minutes.
Spread shrimp mixture on bread sections, bake at 425Â° for 5 minutes or until lightly browned.
