Hot Szechuan Sauce
|Red chilies||100 Gram (Whole Ones)|
|Ginger||50 Gram, grated|
|Garlic||10 Clove (50 gm), very finely chopped|
|Chopped celery||1 Tablespoon|
|Tomato ketchup||3 Tablespoon|
|Pepper powder||1⁄2 Teaspoon|
|Chopped spring onion||1 (For Garnishing)|
1 Remove the seeds from the red chillies and soak them in hot water for half an hour.
2 Drain and grind to a smooth paste.
3 Take a pan and heat oil in it. Saute ginger, garlic and celery for 2 minutes.
4 Add the prepared red chilli paste and stir fry for another minute.
5 Add the rest of the ingredients and saute well.
6 Add water to adjust consistency and remove from flame when the mixture thickens and starts to leave oil from the sides.
7 Serve garnished with spring onion.
