1. Chop cabbage and green onions.
2. Grate carrots and an inch long piece of fresh ginger.
3. Pour olive oil to a frying pan, and sauté vegetables, add bean sprouts, Soy Sauce, Lime Juice, and mint leaves.
4. When mixture is softened up turn off heat and allow to cool.
5. Submerge spring roll wrappers in warm water for at least 30 seconds.
6. Place wrappers on a flat surface, add vegetable mixture.
7. Fold in sides of wrapper and roll away.
