1) Pull the celery leaves out.
2) Wash and chop the stalk into 2-inch pieces.
3) Sprinkle the chopped stalk with salt.
4) In a wok or frying pan, heat oil. Add in the chopped celery and saute with a wooden spoon.
5) Saute for about 5 minutes.
6) Add in the soy sauce and sugar. Mix well.
7) Serve the Chinese Stir-fried celery garnished with a sprinkling of sesame seeds.
