Prawn Shrimp Chop Suey

Ingredients
  Vegetable oil 30 Milliliter (2 tablespoons)
  Spring onions 5 , trimmed and sliced
  Fresh root ginger piece 1 Small, peeled and chopped
  Garlic clove 1 Small, peeled and crushed
  Peeled prawns 4 Ounce (100 gram)
  Cornflour 2 Teaspoon
  Chicken stock 75 Milliliter (5 tablespoons)
  Soy sauce 22 1⁄2 Milliliter (1 1/2 tablespoons)
  Honey 15 Milliliter (1 tablespoon)
  Dry sherry 15 Milliliter (1 tablespoon)
  Tomato ketchup 15 Milliliter (1 tablespoon)
For finishing
  Bean sprouts 1⁄2 Pound (225 gram)
  Vegetable oil 15 Milliliter (1 tablespoon)
  Egg 1 , beaten
Directions

MAKING
1.In a pan, heat the oil and saute onions in it for a minute.
2.Put ginger, garlic and prawns to it and stir for 2 minutes.
3.Combine stock with cornflor and add to the pan along with soy sauce, honey, sherry and tomato ketchup.
4.Saute for 2 more minutes.

SERVING
5.Serve warm on an omelet along with bean sprouts.

Tip
The dish can be frozen and served after thawing for 4 hours at room temperature and reheating.
