Tangy Cantonese Pork

Ingredients
  Boneless pork loin 1 Pound, trimmed
  Garlic 2 Clove (10 gm)
  Salt To Taste
  Black pepper To Taste
  Fresh ginger 1 1⁄2 Inch
  Onion 1 Small
  Green bell pepper 1
  Fresh orange juice 3 Tablespoon
  Sugar 2 Tablespoon
  Rice vinegar/Cider vinegar 2 Tablespoon
  Soy sauce 2 Tablespoon
  Tomato paste 2 Tablespoon
  Oil 3 Tablespoon
Directions

GETTING READY
1) Cut the pork into 1-inch dice and place in a medium bowl.
2) Remove the peel of garlic.
3) Now place in a small bowl, and using a fork mash it with 1 teaspoon salt. 4) Add the garlic and 1/4 teaspoon black pepper to the pork.
5) Remove the peel and grate the ginger, add to the pork, and stir well and put aside.
6) Pare the onion and cut crosswise into thin slices.
7) Now separate the individual onion rings.
8) Make 2 halves by cutting the bell pepper seed, and devein, cut into thin slices.

MAKING
9) In a small bowl, pour the orange juice, stir in the sugar, vinegar, soy sauce, and tomato paste and continue mixing until all the sugar dissolves.
10) Heat a wok over high heat.
11) Add the oil and heat till it is hot.
12) Now add the meat and stir-fry for 2 minutes.
13) Next add the onion rings and bell pepper and stir-fry further for 2 minutes.

SERVING
14) Add the seasoning liquid and stir-fry or 2 minutes and serve at once.
