Chinese Pot Poached Duck Squares
|Duck||5 Pound, cut into 1 1/2 inch cubes (1 Whole, 2.25 Kilogram)|
|Dry white wine||1 Cup (16 tbs) (2.5 Deciliter)|
|Dark soy sauce||10 Tablespoon|
|Dry sherry||60 Milliliter (1/4 Cup)|
|Scallions||4 , white bottoms and green tops, minced|
1) In a 4-quart pressure cooker, the duck cubes on the base rack, pour in the wine, soy sauce, sherry, scallions and sugar.
2) Place the lid, bring up the pressure to 15 pounds and cook for 25 minutes. Turn off the heat, lower the pressure immediately.
3) Check if the duck flesh, comes out easily from the bone, or allow to pressure cook for another 5 minutes, until tender.
4) Spoon the duck squares on small warmed serving plates, drizzle the sauce over the pieces and serve immediately.
