Chu Jou Pi Chi Tang
|Lean pork||1⁄2 Pound|
|Water||4 Cup (64 tbs)|
|Condensed chicken bouillon||4 Cup (64 tbs)|
|Onion||1 Small, thinly sliced|
|Celery stalk||1 , thinly sliced|
|Watercress||1 Cup (16 tbs), sliced (Firmly Packed For Measuring)|
Cut pork into shreds, add to water, and simmer for 10 minutes.
Add bouillon, onion, celery, salt, and pepper and simmer for 10 minutes more.
Add watercress to soup and bring to a boil.
Makes 1 1/2 quarts, or 4 servings.
