Braised Halibut Chinese Style

Ingredients
  Oil 1 Tablespoon
  Halibut fillet 6 Ounce, cut into chunks (175 Gram)
  Ginger root slice 2 , peeled and cut into strips
  Spring onion 1 , cut into strips
  Stock 2 Tablespoon
  Dry sherry 2 Teaspoon
  Soy sauce 2 Teaspoon
  Cornflour 1⁄4 Teaspoon
  Salt To Taste
  Freshly ground black pepper 1
  Onions spring 2 Tablespoon (To Garnish:)
  Tomato wedges 8 (To Garnish:)
Directions

MAKING
1) In a small frying pan, fry the halibut in the heated oil, quickly until evenly browned; stir in the ginger and spring onion and saute for further 1 min.
2) In a bowl, add the stock, sherry, soy sauce, cornflour, salt and pepper; blend well and pour over the fish; allow to the boil and simmer for 5 min, stirring at intervals.

SERVING
3) Garnish with the spring onions and tomato wedges and serve immediately.
