Chinese Chicken With Cashew Nuts

Ingredients
  Chicken meat 6 Ounce, cut in 1/2 inch pieces (150 Grams)
  Frying oil 2 Cup (32 tbs) (For Deep Frying)
  Cashew nuts 4 Ounce (100 Grams)
  Mushrooms 4 Ounce, thinly sliced (100 Grams)
  Canned bamboo shoots 2 Ounce, drained and sliced (50 Grams)
  Frozen peas 4 Ounce (100 Grams)
  Sugar 1⁄2 Teaspoon
  Cornflour 2 Teaspoon, dissolved in 2 tablespoon water
  Water 2 Tablespoon
For marinade
  Medium dry sherry 1 Teaspoon
  Soy sauce 2 Teaspoon
  Oil 1 Teaspoon
  Cornflour 2 Teaspoon
  Salt To Taste
  Pepper To Taste
Directions

GETTING READY
1) In a bowl, mix in all the ingredients for the marinade.
2) Add chicken to the marinade. Keep aside for 10 minutes.

MAKING
3) In a heavy frying-pan heat 1 tablespoon oil.
4) Fry cashew nuts till golden brown. Keep aside.
5) Fry mushroom in the oil for 1 minute. Keep aside.
6) Heat 1 tablespoon oil and fry chicken for 2 minutes.
7) Stir constantly and cook till done.
8) Add mushrooms, bamboo shoots, peas and water and cook in simmering heat for 2 minutes.
9) Blend in sugar and cornflour and cook till sauce thickens.
10) Adjust seasoning.

SERVING
11) Serve hot in a serving dish sprinkled with cashew nuts.

TIPS
Keep in a tight container and freeze. Before serving shift to pan with 2 tablespoons water and cook covered.
