Spicy Chinese Eggplant

Ingredients
  Eggplants 3 , cut in to chunks
  Oil 3 Tablespoon
  Onion 1⁄2 , chopped
  Red pepper 1⁄2 , chopped
  Green pepper 1⁄2 , chopped
  Peppers 6
  Salt 1⁄2 Teaspoon
  Sugar 1⁄2 Teaspoon
  Soy sauce 1 Tablespoon
  Black bean sauce 1 Tablespoon
  Tomato paste 1 Teaspoon
  Sesame oil 1 Teaspoon
Directions

GETTING READY
1) In a small bowl, combine the sauces and tomato paste. Keep it aside.

MAKING
2) In a fry pan add oil and heat up over high heat.
3) Add onions and sauté until translucent.
4) Add eggplant to the fry pan and sauté until it changes color.
5) Add the sauce mixture and other ingredients except the sesame oil.
6) Mix well over high heat for 5-6 minutes.
7) Before removing from heat, drizzle sesame oil on top and stir in.

SERVING
8) Serve hot as a side dish with pasta, rice or bread.
