Honey Orange Chicken
|Boneless, skinless whole chicken breasts||2|
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Orange juice||1⁄2 Cup (8 tbs)|
|Whiskey||1⁄2 Cup (8 tbs)|
|Hot cooked rice||2 Cup (32 tbs)|
Cut chicken into 4 serving pieces.
Place in a 2-quart microwave casserole.
In bowl, blend together honey, cornstarch, marmalade, orange juice and whiskey.
Pour over chicken.
Cover and microwave on HIGH for 12 minutes.
Turn; stir in chicken, and micro wave for 8 more minutes until chicken is tender.
Serve immediately with hot, cooked rice.
