Cantonese Fried Chicken

Ingredients
  Fryer chicken 3 1⁄2 Pound (1 Whole)
  Brown gravy sauce 3 Tablespoon
  Salt 1 1⁄2 Teaspoon
  Pepper 1⁄2 Teaspoon
  Sugar 1 1⁄2 Teaspoon
  Butter 3 Tablespoon
  Shortening 3 Tablespoon
  Water chestnuts 6 , sliced
  Sliced fresh mushrooms 1 1⁄2 Cup (24 tbs)
  Chicken broth 1 Cup (16 tbs)
  Soy sauce 1 Tablespoon
  Cornstarch 1 Tablespoon
  Water 1 Tablespoon
  Sliced green onions 1 Tablespoon (For Garnish)
Directions

MAKING
1) Begin by cutting the chicken into serving pieces
2) In a saucepan, place the chicken pieces and add water, brown gravy sauce, salt, pepper and sugar
3) Cook for 15 minutes in low heat, remove from heat, drain and pat dry
4) In a skillet, add butter and shortening and sauté chicken till golden brown
5) Cover this and cook for 20 minutes over low heat
6) Place the chicken on a platter after removing from the skillet
7) Reserve only 3 tablespoons fat from skillet and combine water chestnuts, mushrooms, broth, soy sauce and remaining salt and sugar into this
8) Cover this mixture and simmer for about 5 minutes
9) In a bowl, combine cornstarch and water, add it to the vegetable mixture and cook until it’s thick

SERVING
10) Pour this mixture over chicken and garnish it with green onions before serving
