Chicken Chop Suey

Ingredients
  Chopped onion 1⁄2 Cup (8 tbs)
  Chopped celery 1⁄2 Cup (8 tbs)
  Chopped green pepper 1⁄2 Cup (8 tbs)
  Salad oil 4 Tablespoon
  Stock/Water 1⁄2 Cup (8 tbs)
  Cornstarch 3 Tablespoon
  Salt 3⁄4 Teaspoon
  Pepper 1⁄8 Teaspoon
  Brown sauce 1 Teaspoon (Chinese Style)
  Soy sauce 1 Tablespoon
  Cold water 2 Tablespoon
  Brown sugar 1⁄2 Teaspoon
  Bean sprouts 1 Can (10 oz), drained
  Diced cooked chicken 3 Cup (48 tbs)
Directions

MAKING
1) In a saucepan, cook the onions, celery and green pepper together for about 5 minutes. Do not brown the vegetables.
2) Add the stock to the saucepan and bring mixture to boiling point.
3) Combine together the cornstarch, salt and pepper to taste, sauces, water and sugar. Blend the mixture till it is smooth and add it to the onion mixture in the saucepan. Bring the concoction to boiling point.
4) Add the chicken and bean sprouts to the concoction and heat thoroughly.

SERVING
5) Serve hot over rice. If desired, serve with additional soy sauce.
