Broiled Orange Chicken
|Broiler fryer chicken||3 Pound, cut up (1 Piece)|
|Cooking oil||1 Tablespoon|
|Bottled barbecue sauce||1⁄2 Cup (8 tbs)|
|Orange marmalade/Plum preserves / pineapple preserves||1⁄2 Cup (8 tbs)|
GETTING READY 1) Wash chicken pieces. MAKING 2) Brush chicken pieces with oil and sprinkle salt and pepper over it. 3) On the rack of unheated broiler pan, place the chicken with skin side down and broil 5 to 6 inches from heat for about 20 minutes. 4) Turn and broil again for about 10 minutes. 5) In a saucepan, combine barbecue sauce and marmalade or preserves. 6) With the sauce, brush the chicken pieces and broil for about 5 minutes or till tender. 7) Meanwhile, heat sauce through. SERVING 8) Just before serving, brush chicken with sauce and pass remainder. 9) Garnish chicken with lemon slice, an orange slice and curly endive, if desired.
