|Red snapper||1 (2-3 Pounds)|
|Cooking oil||1⁄4 Cup (4 tbs) (preferably coconut oil, for rubbing and greasing the grill)|
|Ground ginger||1⁄2 Teaspoon|
Smaller or larger snapper are just as good, and many other fish may be grilled in the same way.
Have the fish cleaned but head left on.
Rub all over with oil, coconut oil if available, but any cooking oil will do.
Rub inside cavity with ginger.
Place fish on oiled grill over charcoal and cook just until flesh tests done.
Turn carefully and grill other side or broil for 15 minutes on each side.
Season with salt to taste.
