Chinese Beef And Broccoli

Ingredients
  Beef sirloin steak 1 Pound, cut 1/2 inch thick
  Cornstarch 4 Teaspoon
  Soy sauce 2 Tablespoon
  Cooking oil 2 Teaspoon
  Salt 1 Teaspoon
  Broccoli/20 ounce packages frozen broccoli spears 1 Pound
  Gingerroot/1/2 teaspoon ground ginger 1
  Cooking oil 3 Tablespoon
  Green onions 2 , thinly sliced (With Tops)
  Hot cooked rice 1 Cup (16 tbs)
Directions

Partially freeze beef; slice diagonally in 3x1/4 inch strips.
Combine cornstarch, soy sauce, the 2 teaspoons oil, and salt in bowl.
Add beef; toss to coat well.
Slice broccoli lengthwise in thin strips, 3 inches long.
Heat ginger in 3 tablespoons oil in electric wok or skillet at 375°.
Add broccoli and stir-fry 3 to 5 minutes.
Remove from pan.
Add more oil, if necessary, and stir-fry beef till well browned, 5 minutes.
Return broccoli to pan; add 1/2 cup water.
Cook and stir till gravy is thickened and clear.
Garnish with green onion slices.
Serve with hot cooked rice.
