Jim's Cashew Chicken Chop Suey
|Boneless chicken breasts||24 Ounce, skin removed, cut into 1 x 1/4 inch strips (2 whole, 12 ounce each)|
|Sliced celery||1⁄2 Cup (8 tbs), 1/4 inch thick|
|Onion||1 Small, thinly sliced|
|Soy sauce||3 Tablespoon|
|Minced fresh ginger root||1 Teaspoon|
|Water||1⁄4 Cup (4 tbs)|
|Canned ready to serve chicken broth||14 1⁄2 Ounce (1 can)|
|Canned bean sprouts||14 Ounce, drained (1 can)|
|Canned water chestnuts||8 Ounce, drained (1 can)|
|Canned bamboo shoots||8 Ounce, drained (1 can)|
|Canned sliced mushrooms||4 Ounce, drained (1 can)|
|Cashews||1⁄2 Cup (8 tbs)|
Combine chicken, celery, onion, soy sauce, gingerroot, salt and pepper in 2-quart casserole.
Microwave at High for 5 to 8 minutes, or until vegetables are tender and chicken is no longer pink, stirring once or twice.
Blend cornstarch and water in 1-cup measure.
Stir into vegetables and chicken.
Stir in remaining ingredients, except cashews.
Microwave, uncovered, at High for 15 to 19 minutes, or until mixture is thickened and translucent, stirring 2 or 3 times.
