Loquat Preserves

Ingredients
  Loquats 1 Pound
  Sugar 1 1⁄2 Cup (24 tbs)
Directions

Dip the loquats in boiling water until the skins slip, then peel and remove the seed.
Combine the sugar and 1 1/2 cups water and bring to a boil.
Cook for 5 minutes, stirring to dissolve the sugar.
Add the loquats and cook over high heat until clear and the sugar is thick.
Pack immediately into hot jars and seal.
