Roast Beef Salad with Chinese Dressing
|Rice vinegar||1⁄4 Cup (4 tbs)|
|Vegetable oil||1⁄4 Cup (4 tbs)|
|Soy sauce||3 Tablespoon|
|Sesame oil||2 Tablespoon|
|Dijon style mustard||1 Tablespoon|
|Minced garlic||2 Teaspoon|
|Chili oil||1 Teaspoon|
|Iceberg lettuce head||1 Small, shredded|
|Carrot||1 Small, cut into matchstick pieces|
|Cucumber||1⁄2 , peeled, seeded, and cut into matchstick pieces|
|Beef roast||1⁄2 Pound, cut into thin strips|
|Green onions with tops||2 , slivered|
Place dressing ingredients in a blender.
Process mixture for 10 seconds or until smooth.
Place lettuce, carrot, and cucumber in a large wide salad bowl; toss well.
Arrange roast beef strips on salad.
Pour dressing over roast beef and sprinkle with green onions.
Toss just before serving.
