|Fresh bean sprouts||8 Ounce (250 Grams)|
|Water||1⁄2 Cup (8 tbs)|
|Freshly ground black pepper||1|
|Cooked ham/Prawns / pork||1 Cup (16 tbs)|
Wash the bean sprouts.
Finely chop the green pepper and spring onions.
Fry the bean sprouts and green pepper in oil for 5 minutes, stirring frequently.
Drain and put aside.
Beat eggs well, add water, salt and pepper.
Stir in vegetables and prepared meat or prawns.
Pour about one sixth of the mixture at a time into the hot lightly oiled frying pan.
Tilt the pan to cover evenly.
Cook until brown underneath and the surface is dry.
Fold in half and cook one minute more.
Serve with the soy sauce broth.
