Orange Chicken And Rice

  Ready to cook broiler fryer chicken 3 Pound, cut up (1 Whole)
  Frozen orange juice concentrate 1⁄4 Cup (4 tbs), thawed
  Butter/Margarine 2 Tablespoon
  Ground ginger 1⁄2 Teaspoon
  Raisin rice 2 Cup (32 tbs)

Sprinkle chicken with salt and pepper.
Place pieces, skin side up and not touching, in foil-lined shallow baking pan.
Bake in moderate oven (375°) for 40 minutes.
In saucepan, combine orange juice concentrate, butter, and ginger; heat.
Spoon over chicken and bake 20 minutes longer or till tender.
Stir pan drippings to blend.
Serve over Raisin Rice: In saucepan, combine 1 cup water and 1 tablespoon frozen orange juice concentrate, thawed; bring to boiling.
Add 1 cup packaged precooked rice, 2 tablespoons raisins, and 1/2 teaspoon salt; continue cooking according to directions on rice package.
Sprinkle with 2 tablespoons toasted slivered blanched almonds.
