Chinese Beef And Green Beans
|Flank steak||4 Ounce, cut crosswise into strips 1/4 inch thick and 2 inches long|
|Soy sauce||1 1⁄2 Teaspoon|
|Green beans||4 Ounce|
|Vegetable oil||2 Tablespoon|
|Garlic||1 Clove (5 gm), peeled and minced|
1. Put the steak slices into a small bowl, add the soy sauce, and toss to mix. Let the steak stand for 10 minutes to marinate. Meanwhile, wash the beans, cut off the ends, and break into 2-inch lengths.
2. Heat the oil in a heavy 8-inch skillet over moderate heat for about 1 minute. Add the garlic and salt, and cook, stirring, for 30 seconds. Do not let the garlic brown. Add the beans to the skillet and cook, stirring, for 3 minutes. Add the water, cover, reduce the heat, and cook for 3 more minutes.
3. Raise the heat to moderately high, cook until the water has boiled away, then add the steak and marinade. Cook, uncovered, stirring constantly, for 2 minutes. The steak should be pink; do not overcook or it will be tough. Serve with rice.
