Szechuan Pork

  Boneless pork loin/Leg 1 Pound
  Soy sauce 1 Tablespoon
  Cornstarch 1 Tablespoon
  Ground red pepper 1⁄2 Teaspoon (Cayenne)
  Garlic 1 Clove (5 gm), finely chopped
  Broccoli flowerets/1 package 16 ounces frozen broccoli cuts, thawed and drained 3 Cup (48 tbs), drained
  Onions 2 Small, cut in eighths
  Canned water chestnuts 8 Ounce, drained (1 Can)
  Chicken broth 1⁄4 Cup (4 tbs)
  Peanuts 1⁄2 Cup (8 tbs)
  Hot cooked rice 2 Cup (32 tbs)

1. Trim fat from pork loin. Cut pork across grain into 2 x 1 x 1/8-inch slices. Toss pork, soy sauce, cornstarch, red pepper and garlic in 3-quart casserole. Cover tightly and refrigerate 20 minutes.
2. Microwave tightly covered on high 9 to 10 minutes, stirring after 4 minutes, until pork is no longer pink.
3. Stir in broccoli, onions, water chestnuts and broth. Cover tightly and microwave 6 to 8 minutes, stirring after 3 minutes, until broccoli is crisp-tender. Stir in peanuts. Serve with rice.
