Chinese Sea Bass's picture
  Peanut oil 2 Tablespoon
  Sesame seeds 2 Tablespoon
  Minced ginger 1 Tablespoon
  Garlic 2 Clove (10 gm), minced
  Scallions 2 , minced (White And Tender Greens)
  Soy sauce 3 Tablespoon
  Dry white wine 3 Tablespoon
  Sea bass 3 Pound, cleaned
  Cilantro 4 Tablespoon, finely chopped

Preheat oven to 400°.
Heat oil in saute pan over high heat and saute sesame seeds until golden, about 1 minute.
Add ginger, garlic, scallions, and cook, stirring constantly, 2 to 3 minutes, until scallions are barely wilted.
Add soy sauce and wine, lower heat, and simmer 1 minute.
Place fish on rack in roasting pan; pour half the sauce over it and bake 10 minutes.
Pour remaining sauce over fish and bake 5 more minutes, or until fish flakes easily with a fork.
Transfer to serving platter, sprinkle with cilantro, and serve.
