Chinese Vegetable Soup

Ingredients1 qt well-seasoned chicken broth
1 cup sliced button mushrooms
1/2 cup fresh or frozen green peas
1/4 lb snow peas, trimmed and sliced
3 or 4 green onions, sliced
2 new carrots, scraped and sliced
1/2 cup sliced celery or diced Chinese cabbage
Pinch ginger or slice of fresh ginger
1 1/2 cups cooked chicken, diced and/or 1 cup cooked rice, optional
Simmer the first 8 ingredients together until vegetables are crisp-tender.
Add chicken and/or rice and reheat thoroughly.
