Microwaved Pork Chow Mein
|Lean pork||1 Pound, cut in small pieces|
|Thinly sliced celery||2 Cup (32 tbs) (On The Diagonal)|
|Chopped onion||1 Cup (16 tbs)|
|Water||1⁄4 Cup (4 tbs)|
|Canned mixed vegetables||19 Ounce, drained, rinsed (1 Can)|
|Beef broth||1 Cup (16 tbs)|
|Soy sauce||2 Tablespoon|
|Brown sauce/Molasses||1 Tablespoon|
1. Put meat into a 2-quart glass casserole. Cover with an all-glass lid or plastic wrap. Cook in microwave oven 4 minutes at HIGH, or until meat begins to lose its pink color; stir once.
2. Add celery and onion to meat; mix. Cook covered in microwave oven 3 minutes at HIGH.
3. Blend 2 tablespoons cornstarch with water; stir into meat mixture. Add Chinese vegetables, broth, soy sauce, brown sauce and ginger; mix well.
4. Cook covered in microwave oven 20 to 25 minutes at SIMMER, or until meat is tender; stir twice during cooking. If sauce does not seem thick enough halfway through cooking, remove 1/4 cup of cooking liquid, cool slightly and mix in remaining cornstarch. Stir into casserole mixture and continue cooking.
