Chinese Style Casserole

Ingredients
  Bean sprouts 16 Ounce, drained, rinsed (1 can)
  Water chestnuts 8 Ounce, drained (1 can)
  Chopped green pepper 1⁄2 Cup (8 tbs)
  Chopped onion 1⁄4 Cup (4 tbs) (1 small size)
  Eggs 6 , beaten
  Chopped pimiento 1 Tablespoon
  Salt 3⁄4 Teaspoon
Directions

1. Prepare Sauce.
2. Mix bean sprouts, water chestnuts, green pepper and onion in 1 1/2-quart casserole. Cover tightly and microwave on high (100%) 3 minutes; stir. Cover and microwave until vegetables are hot, 2 to 3 minutes longer; drain.
3. Stir in eggs, pimiento and salt. Cover tightly and microwave on high (100%) 2 minutes; stir. Cover and microwave until eggs are set but still moist, 1 1/2 to 4 minutes longer. Spoon Sauce over each serving.
