Orange Flavored Beef
|Vegetable oil||2 Tablespoon|
|Beef chuck roast||3 Pound|
|Cilantro leaves||1⁄2 Cup (8 tbs)|
|Orange juice||1 1⁄2 Cup (24 tbs)|
|Japanese soy sauce||3⁄4 Cup (12 tbs)|
|Dark brown sugar||1⁄2 Cup (8 tbs)|
|Ginger root slices||2 , smashed (1/8 Inch Thick)|
|Orange peel||1 Teaspoon, freshly grated|
|Green onion||1 , cut in half|
|Dry white wine||1⁄4 Cup (4 tbs)|
Prepare Orange-Flavored Master Sauce.
Heat a wok or medium-size saucepan over medium-high heat 1 minute.
When oil is hot, add beef; saute on all sides.
Add Orange-Flavored Master Sauce.
Bring to a boil.
Reduce heat to medium-low.
Cover pan and simmer beef 1-1/2 hours or until tender.
Cool beef in sauce.
Remove and discard star anise, gingerroot and green onion.
Cut beef in paper-thin slices.
Arrange slices overlapping on a serving platter.
Garnish with cilantro.
Reheat sauce and serve with beef, if desired.
