Basic Chinese Style Rice

Ingredients
  Long-grain rice 1 Cup (16 tbs)
  Cold water 1 1⁄2 Cup (24 tbs)
Directions

Combine the rice and water in a medium saucepan.
Bring to a boil, reduce the heat to medium-high, and cook uncovered until the water is nearly evaporated.
Reduce the heat to low, cover, and simmer until the rice is tender, about 15 minutes.
Remove from the heat and let stand, covered, for 5 minutes.
