Chinese Almond Cookies
|Gold medal flour||3 1⁄2 Cup (56 tbs)|
|Sugar||2 Cup (32 tbs)|
|Baking powder||1 Teaspoon|
|Shortening||2 Cup (32 tbs) (Part Butter Or Margarine)|
|Egg||1 , beaten|
|Almond extract||2 Teaspoon|
|Whole blanched almonds||3 Tablespoon|
Heat oven to 375° (quick mod.).
Measure flour by dipping method or by sifting.
Blend flour, sugar, and baking powder.
Add shortening, egg, and flavorings; mix thoroughly with hands until dough is smooth and well blended.
Roll dough 1/4" thick on lightly floured board; cut with 2" round cooky cutter.
Put one almond in center of each cooky; place 1 1/2" apart on ungreased baking sheet.
Bake about 12 min., or until cookies are lightly browned
