Chinese Fried Rice

Ingredients
  Finely diced cooked ham/Finely diced cooked chicken / pork 1 Cup (16 tbs)
  Salad oil 1⁄4 Cup (4 tbs)
  Canned broiled sliced mushrooms 6 Ounce, drained (1 Can, 1 1/3 Cups)
  Chilled cooked rice 7 Cup (112 tbs) (Day Old)
  Green onions 2 , finely chopped
  Soy sauce 1⁄4 Cup (4 tbs)
  Eggs 2 , well beaten
Directions

In 12-inch skillet, brown meat in hot oil.
Add mushrooms, rice, onion, and soy sauce.
Continue to fry over low heat about 15 minutes, stirring constantly.
Add well-beaten eggs and continue to stir for another 15 minutes or until dry enough to be fluffy.
Add additional soy sauce, if desired.
