Chinese Fried Rice
|Finely diced cooked ham/Finely diced cooked chicken / pork||1 Cup (16 tbs)|
|Salad oil||1⁄4 Cup (4 tbs)|
|Canned broiled sliced mushrooms||6 Ounce, drained (1 Can, 1 1/3 Cups)|
|Chilled cooked rice||7 Cup (112 tbs) (Day Old)|
|Green onions||2 , finely chopped|
|Soy sauce||1⁄4 Cup (4 tbs)|
|Eggs||2 , well beaten|
In 12-inch skillet, brown meat in hot oil.
Add mushrooms, rice, onion, and soy sauce.
Continue to fry over low heat about 15 minutes, stirring constantly.
Add well-beaten eggs and continue to stir for another 15 minutes or until dry enough to be fluffy.
Add additional soy sauce, if desired.
