Chinese Almond Cookies
|Almonds||1⁄2 Cup (8 tbs)|
|All purpose flour||1 Cup (16 tbs)|
|Baking powder||1⁄2 Teaspoon|
|Butter/Margarine||1⁄2 Cup (8 tbs)|
|Granulated sugar||1⁄3 Cup (5.33 tbs)|
|Almond extract||1⁄2 Teaspoon|
|Gin/Vodka /water||1 Tablespoon|
Reserve 36 whole almonds; finely chop or grind remainder.
Sift flour with baking powder and salt.
Thoroughly cream butter and sugar.
Stir in all remaining ingredients except whole almonds.
Form dough into 36 balls.
Place on greased cookie sheets.
Press a whole almond in center of each ball.
Bake in 350°F. oven for 20 minutes or until lightly browned.
