Chinese Style Scrambled Eggs
|Butter||1⁄4 Cup (4 tbs)|
|Green pepper||1⁄2 Cup (8 tbs), chopped|
|Onion||1⁄2 Cup (8 tbs), chopped|
|Celery||1⁄2 Cup (8 tbs), sliced|
|Pepper||To Taste, freshly ground|
Beat eggs and mayonnaise together thoroughly.
Melt butter; add green pepper, onion, and celery.
Saute until golden.
Pour over the egg mixture and cook over low heat, stirring occasionally, until eggs are set.
Do not salt.
Grind pepper over eggs just before serving
