Fried Bamboo Shoots Water Chestnuts And Chinese Mushrooms
|Bamboo shoots||4 Tablespoon|
|Garlic||1 Clove (5 gm), crushed|
|Peanut oil||1 Tablespoon|
|Chicken stock||1⁄4 Pint (5/8 Cups)|
|Soy sauce||1⁄2 Teaspoon|
|Cornflour||1 Teaspoon (Leveled)|
|Cold water||1 Tablespoon|
Thinly slice the bamboo shoots.
Halve or quarter the chestnuts.
Slice the mushrooms, discarding the stalks.
Fry the garlic in the oil until golden and then discard it.
Fry the pieces of onion for 1/4 minute.
Add the bamboo shoots, chestnuts and mushrooms and cook for 1/2 minute.
Add the hot stock, the seasonings and the soy sauce.
Bring to the boil.
Blend the cornflour with the water and stir it in.
Boil for 1 1/2 minutes.
