Hot & Sour Chinese Cabbage
|Chinese cabbage||2 Pound|
|Minced garlic||4 1⁄2 Teaspoon|
|Dried hot red peppers||6 , broken in 1/2-inch squares|
|Rice vinegar/White vinegar||1⁄3 Cup (5.33 tbs)|
|Sugar||1⁄2 Cup (8 tbs)|
Cut cabbage into 3" x 1/2" pieces.
Mix cabbage pieces and salt in a large bowl.
Let stand 4 hours.
Drain cabbage and squeeze to remove water; discard water.
Return cabbage to bowl.
Add garlic and red peppers.
Bring vinegar to a boil in a small saucepan.
Pour over cabbage mixture.
Add sugar; mix well.
Cover and let stand 4 hours.
