Cantonese Chicken

Ingredients
  Chicken breasts 3
  Dry sherry 3⁄4 Cup (12 tbs)
  Sesame oil 2 Tablespoon
  Soya sauce 2 Tablespoon
  Sugar 1⁄2 Teaspoon
  Ginger root slices 5
  Garlic 1 Clove (5 gm), minced
  Pineapple chunks 1 Tablespoon
  Green pepper chunks 1
  Quartered onions 1 Cup (16 tbs)
  Cherry tomatoes 1 Tablespoon
  Mushrooms 1 Cup (16 tbs)
Directions

Skin and bone chicken breasts, if desired, or just cut in quarters.
Combine sherry, oil, soya sauce, sugar, ginger and garlic in a large bowl.
Add chicken and marinate overnight.
Arrange chicken in a 14 flat dish, add marinade and bake at 350° for 30 minutes.
Add all, or any combination of remaining ingredients, baste with marinade and bake 20 to 30 minutes more, or until chicken is cooked.
