Wok Stir Fry

One wok, ingredients galore, three dishes. This video features Beef and broccoli, Chicken with cashew nuts, Fried rice. When you cook for yourself you can Save Money, Eat Healthier, Live Greener and Have Fun.

Ingredients

For beef stir fried
Broccoli 1 , sliced
Extra virgin olive oil 1 Tablespoon
London broil 1 Pound , thinly sliced
White wine 1/4 Cup (4 tbs)
Sliced shiitake mushrooms 1 Cup (16 tbs)
Sliced celery 1/4 Cup (4 tbs)
Sliced onion 1/4 Cup (4 tbs)
Sliced red bell pepper 1/4 Cup (4 tbs)
Low sodium soy sauce 1 Tablespoon
Fresh ground pepper To Taste
Jalapeno 1
Beans sprout 1/4 Cup (4 tbs)
For chicken and cashew stir fried
Extra virgin olive oil 1 Tablespoon
Chicken breasts 2 , thinly sliced
Low sodium soy sauce 1 Tablespoon , divided
Snow peas 1/2 Cup (8 tbs)
Sliced onion 1/4 Cup (4 tbs)
Fresh ground pepper To Taste
Frozen pineapple 1/4 Cup (4 tbs) , sliced
Roasted cashew nuts 1/4 Cup (4 tbs)
Cayenne 1 Dash
White wine 1/4 Cup (4 tbs)
For fried rice
Extra virgin olive oil 1 Tablespoon
Sliced pancetta 1/4 Cup (4 tbs)
Egg 1 , beaten
Frozen peas 1/2 Cup (8 tbs)
Cooked rice 2 Cup (32 tbs)
Low sodium soy sauce 1/2 Cup (8 tbs)
Water 1/2 Cup (8 tbs)
Fresh ground pepper To Taste
Sliced scallion 2 Tablespoon

Directions

FOR BEEF STIR FRIED

Making

In a wok, heat extra virgin olive oil and add in the London broil. Cook on both sides and take out from the wok and set aside in a plate.

To the same wok, add in broccoli and some white wine. Cover and cook for a few minutes.

Add in the shiitake and cook covered, followed by the celery, onion and red bell pepper. cook for a few minutes.

Season with low sodium soy sauce and pepper. Add in the jalapeno and bean sprouts.

Stir the beef back to the wok and stir fry.

SERVING

Serve the beef stir fry with some rice of your choice.

FOR CHICKEN AND CASHEW STIR FRIED

MAKING

In a wok, heat extra virgin olive oil and add in the chicken breast. Season with low sodium soy sauce and stir fry for a few minutes. Take out from the wok and set aside in a plate.

Into the same wok, add in the snow peas and some more soy sauce, followed by onion and season with pepper. Stir for a few seconds.

Add in the pineapple, cashew nuts and season with cayenne. Stir in the cooked chicken and pour in white wine. Cover and cook for a few minutes.

SERVING

Serve the cashew chicken with some rice of your choice.

FOR FRIED RICE

In a wok, heat the olive oil and add in the pancetta. Stir fry for a few minutes.

Add in the egg and stir for a few seconds.

Stir in the peas and cooked rice, mix well.

In a jar, mix together low sodium soy sauce and water.

Pour the soy sauce mixture to the rice and cook for a few minutes.

Season with pepper and scallion and stir fry.

SERVING

Serve the rice with beef or chicken.
