You can prepare homemade Chinese Almond Cookies. These are easy to prepare. These buttery shortbread cookies are topped with slivered almonds.
Butter | 1 Cup (16 tbs) , softened | |
Granulated sugar | 1 Cup (16 tbs) | |
Egg | 1 | |
Almond extract | 1 Teaspoon | |
Baking soda | 1 Teaspoon | |
Salt | 1/2 Teaspoon | |
Flour | 1 Cup (16 tbs) | |
Egg white | 1 | |
Water | 1 Teaspoon | |
Slivered almonds | 1/2 Cup (8 tbs) |
GETTING READY
Preheat oven to 355 degrees F.
MAKING
In a large bowl, cream together butter and sugar.
Add in the egg and mix, followed by the almond extract, baking soda and salt.
Gradually add in the flour and mix well.
Using a cookie scoop take out the mixture and place on cookie sheets. Flatten with a glass bottom.
In a small bowl, mix together egg white and water. Brush the cookie top with egg wash and garnish with slivered almonds. Bake in the oven for 12 – 15 minutes, until crispy.
Take out the cookies from the oven and place on a cooling rack.
SERVING
Serve the cookies with tea or coffee.
