|Canned hominy||15 Ounce, drained|
|Bacon drippings||2 Tablespoon|
|Pimentos||2 Ounce, chopped|
|Canned chili||1 Can (10 oz)|
|Grated cheese||1⁄4 Cup (4 tbs), grated|
|Coarsely chopped onions||1 Cup (16 tbs), coarsely chopped|
|Sliced olives||1 Tablespoon, sliced|
Saute hominy in bacon drippings for several minutes.
Add pimentos, salt and pepper.
Place hominy in greased baking dish.
Heat chili in skillet; stir well.
Sprinkle layer of grated cheese and onions over hom- iny; pour chili over.
Add second layer of cheese and onions.
Top with sliced olives.
Bake in 350-degree oven for 20 minutes or until heated through.
