Hominy Chili

Ingredients
  Canned hominy 15 Ounce, drained
  Bacon drippings 2 Tablespoon
  Pimentos 2 Ounce, chopped
  Canned chili 1 Can (10 oz)
  Grated cheese 1⁄4 Cup (4 tbs), grated
  Coarsely chopped onions 1 Cup (16 tbs), coarsely chopped
  Sliced olives 1 Tablespoon, sliced
  Salt To Taste
  Pepper To Taste
Directions

Saute hominy in bacon drippings for several minutes.
Add pimentos, salt and pepper.
Place hominy in greased baking dish.
Heat chili in skillet; stir well.
Sprinkle layer of grated cheese and onions over hom- iny; pour chili over.
Add second layer of cheese and onions.
Top with sliced olives.
Bake in 350-degree oven for 20 minutes or until heated through.
