Chili Stuffed Red Peppers
|Red peppers||4 Small|
|Canned corn with red and green bell peppers||12 Ounce (1 Can)|
|Canned chili with beans||15 Ounce (1 Can)|
|Tortilla chips||1 Cup (16 tbs)|
1 Slice the tops from the red peppers, removing the ribs and seeds.
2 In a pan, add the peppers and gently boiling water just enough to cover the peppers and cook for 15 minutes or until tender.
3 Transfer to a small serving platter.
4 In a bowl, mix corn and chili and heat to boiling.
5 Stuff the peppers using this mixture.
6 Garnish with tortilla chips and serve.
