Simple Chili Menos
|Roasted green chilies||1 Can (10 oz), peeled|
|American cheese/Monterey jack||1⁄2 Cup (8 tbs)|
Split one side of chili and remove seeds.
Fit cheese strips (1/4 in thick) into chili and fold over.
Place chiles in a greased baking pan about 1/2 inch apart.
Beat egg slightly, add shortening, salt and pepper, and pour mixture over chiles, covering them.
Bake in moderate oven about 30 minutes.
Crab, turia, or meat may be used in place of cheese.
Serves 2 or may be served with Mexican plate to serve.
