Ingredients
  Light mexican beer 330 Milliliter (Bottle)
  Onions 2 , finely chopped
  Garlic 3 Clove (15 gm), crushed
  Red peppers 2 , deseeded and finely chopped
  Jalapeno chilies 2 , chopped
  Dried smoked chilies 3 , chopped
  Ground cumin 1 Tablespoon
  Vegetable stock 400 Milliliter (Hot)
  Coriander 1 Bunch (100 gm) (Plus Extra For Garnish)
  Rice vinegar 50 Milliliter
  Canned cannellini beans 400 Gram, drained, rinsed
  Canned butter beans 400 Gram, drained, rinsed
  Chopped oregano 1 Tablespoon
  Chili powder 1 Teaspoon
  Smoked paprika 1 Teaspoon
  Grated cheddar cheese 250 Gram
  Lime wedges 4 (To Garnish)
Directions

1. in a large pan, bring the beer, onions, garlic, peppers, jalapenos, smoked chillies, cumin and stock to the boil, then simmer for 10 mins. Blend the coriander, vinegar and a good pinch of salt in a food processor to make a smooth paste. Add the coriander paste, along with both cans of beans, to the spiced stock and simmer for 25 mins.
2. Stir in the oregano, chilli powder and smoked paprika. Sprinkle with grated cheese, then garnish with lime wedges and extra chopped coriander. Serve with tortilla chips or warmed floury tortillas.
