Fruit Chili Relish
|Chopped skinned tomatoes/3 quarts canned tomatoes||8 Pound (4 Quarts Fresh Ones)|
|Chopped peaches/Pears||4 Cup (64 tbs) (6 Unpeeled Ones)|
|Chopped apples||3 Cup (48 tbs) (6 Unpeeled Ones)|
|Peeled chopped onion||5 Cup (80 tbs) (12 In Number)|
|Chopped seeded sweet red peppers||1 1⁄4 Cup (20 tbs)|
|Salt||2 1⁄2 Tablespoon|
|Mixed pickling spice||7 Tablespoon|
|Granulated sugar||2 1⁄2 Cup (40 tbs)|
|Cider vinegar||4 Cup (64 tbs)|
Combine first 6 ingredients.
Cook, uncovered, 1 1/2 hrs., or until reduced one half.
Tie spice in cheesecloth bag, and add to tomato mixture with sugar and vinegar.
Cook, uncovered, 1 hr., or until quite thick, stirring frequently.
Remove spice bag.
Pour into clean, hot preserve jars.
Then adjust covers and process as in Chili Sauce.
