Fruit Chili Relish

Ingredients
  Chopped skinned tomatoes/3 quarts canned tomatoes 8 Pound (4 Quarts Fresh Ones)
  Chopped peaches/Pears 4 Cup (64 tbs) (6 Unpeeled Ones)
  Chopped apples 3 Cup (48 tbs) (6 Unpeeled Ones)
  Peeled chopped onion 5 Cup (80 tbs) (12 In Number)
  Chopped seeded sweet red peppers 1 1⁄4 Cup (20 tbs)
  Salt 2 1⁄2 Tablespoon
  Mixed pickling spice 7 Tablespoon
  Granulated sugar 2 1⁄2 Cup (40 tbs)
  Cider vinegar 4 Cup (64 tbs)
Directions

Combine first 6 ingredients.
Cook, uncovered, 1 1/2 hrs., or until reduced one half.
Tie spice in cheesecloth bag, and add to tomato mixture with sugar and vinegar.
Cook, uncovered, 1 hr., or until quite thick, stirring frequently.
Remove spice bag.
Pour into clean, hot preserve jars.
Then adjust covers and process as in Chili Sauce.
