Chili Cheese Rarebit
|Onion||1 Tablespoon, diced|
|Green bell pepper||2 Tablespoon, diced|
|Canned tomatoes||1 Cup (16 tbs), chopped|
|Chili powder||3⁄4 Teaspoon|
|Sharp cheddar cheese||4 Ounce, shredded|
|Cornstarch||1 Teaspoon, dissolved in 1 tablespoon water|
|Rye bread slices||2 , toasted|
Melt margarine in saucepan; add onion and saute until softened.
Add green pepper and saute about 3 minutes longer.
Add tomatoes and chili powder and simmer mixture 10 minutes or until some of the liquid has evaporated.
Add cheese and cook over low heat, stirring constantly, until cheese is melted.
Stir in dissolved cornstarch and simmer, stirring constantly, until thickened.
