Grilled Chile Relish
|Sweet onion||1 Large, sliced 1/2 inch thick|
|Vegetable oil||1 Tablespoon|
|Light brown sugar||1⁄4 Cup (4 tbs)|
|Whole grain mustard||1⁄4 Cup (4 tbs)|
|Dijon mustard||1⁄4 Cup (4 tbs)|
|Cider vinegar||2 Tablespoon|
|Freshly ground pepper||To Taste|
Light a grill.
Rub the chilies and onion with oil and grill until charred, 8 minutes.
Peel and seed the chilies and cut into thin strips; chop the onion.
Transfer the vegetables to a saucepan.
Add the remaining ingredients and bring to a simmer over moderate heat, then serve.
