Farm Style Chili Con Queso
|Bacon slices||2 , chopped|
|Onion||1 Small, finely chopped|
|Tomato||1 Medium, peeled, seeded, chopped|
|Finely chopped celery||1⁄2 Cup (8 tbs)|
|Canned green chili salsa||7 Ounce (1 can)|
|Grated monterey jack cheese||2 Cup (32 tbs)|
|Tortilla chips||1 Cup (16 tbs) (for dipping)|
In a medium skillet, cook bacon until most of fat is removed.
Add onion, tomato and celery.
Stirring occasionally, cook over medium heat until onion is tender.
Stir in salsa and salt.
Over low heat, stir in cheese until melted; do not boil.
Pour into a small fondue pot or small bowl on a hot tray.
Serve with tortilla chips for dipping.
