Chile Shrimp Skewers
|Olive oil||2 1⁄2 Teaspoon, divided|
|Onion||2 Tablespoon, minced|
|Garlic||1 Clove (5 gm), minced|
|Grated lime rind||1 Teaspoon|
|Fresh lime juice||3 Tablespoon|
|Chopped fresh cilantro||1 1⁄2 Tablespoon|
|Crushed red pepper||3⁄4 Teaspoon|
|Shrimp||36 Large, peeled and deveined, tails intact|
|Limes||1 1⁄2 , cut into 12 wedges|
1. Prepare grill.
2. Heat 1 teaspoon olive oil in a small skillet. Add onion and garlic; saute 3 minutes or until onion is tender.
3. Combine onion mixture, remaining 1 1/2 teaspoons olive oil, lime rind, and next 4 ingredients in a small bowl.
4. Thread 3 shrimp and 1 lime wedge onto 12 (6-inch) skewers. Brush with lime juice mixture. Place on grill rack coated with cooking spray; grill 6 minutes on each side or until shrimp turn pink.
