Chile Shrimp Skewers

Ingredients
  Olive oil 2 1⁄2 Teaspoon, divided
  Onion 2 Tablespoon, minced
  Garlic 1 Clove (5 gm), minced
  Grated lime rind 1 Teaspoon
  Fresh lime juice 3 Tablespoon
  Chopped fresh cilantro 1 1⁄2 Tablespoon
  Crushed red pepper 3⁄4 Teaspoon
  Salt 1⁄4 Teaspoon
  Shrimp 36 Large, peeled and deveined, tails intact
  Limes 1 1⁄2 , cut into 12 wedges
  Cooking spray 1
Directions

1. Prepare grill.
2. Heat 1 teaspoon olive oil in a small skillet. Add onion and garlic; saute 3 minutes or until onion is tender.
3. Combine onion mixture, remaining 1 1/2 teaspoons olive oil, lime rind, and next 4 ingredients in a small bowl.
4. Thread 3 shrimp and 1 lime wedge onto 12 (6-inch) skewers. Brush with lime juice mixture. Place on grill rack coated with cooking spray; grill 6 minutes on each side or until shrimp turn pink.
